Zucchini Potato Bake Recipe
Our zucchini plants are in over production mode and we are bringing in 2-3 large ones a day. On my hunt for new and different ways to serve them to my family I ran across this recipe on Allrecipes.com. With a few little tweaks for family preferences and ingredients on hand we had a fabulously yummy dinner!
- 2 medium zucchini, quartered and cut into large pieces (we used 2 large)
- 4 medium potatoes, peeled and cut into large chunks (I used ½ white ½ sweet potatoes for color & taste)
- 1 medium red bell pepper, seeded and chopped (we used green)
- 1 clove garlic, sliced
- ½ cup dry bread crumbs
- ¼ cup olive oil
- paprika to taste
- salt to taste
- ground black pepper to taste
- Preheat oven to 400 degrees F.
- Chop all veggies into large chunks.
- In a medium baking pan, toss together the zucchini, potatoes, bell pepper, garlic, bread crumbs, and olive oil. Season to taste with paprika, salt, and pepper.
- Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly brown.
i hate zuchinni but wow this looks yummy. and healthy as well! now the hard part is getting the kids to eat it!
Mine were trying to pick out the potatoes LOL. I figure if they’re belly is full and they tried a few zucchini I’m happy.

We eat a lot of zucchini in my house so i live finding new tasty recipes to mix i up a bit i love the potato in this recipe sounds great.
Our zucchini isn’t ready yet, but this looks delicious. I love when I find new recipes that are healthy and doesn’t start with two sticks of butter.

That looks just great. My husband and I are trying to gradually replace the carbs in our diets with more and more veggies. This looks visually appealing and sounds like it would taste amazing.

I actually don’t like zucchini, but I know it’s healthy and low-calorie. I think this would be a good way to try it. Something familiar.
