Clean Eating | Slow Cooker Lentil & Rice Casserole Recipe
I found this recipe the other day while looking for another soup to share. The original poster intended for this to be a “soup”, but with barely any liquid remaining in our batch… we dubbed it a casserole. This recipe has hints of Indian food without the knock you over spice. Everyone loved it and there were a few “words” over the last left-over.
- I used organic ingredients where possible:
- 2 cups dry lentils
- 2 cups uncooked long grain brown rice
- 1 cup chopped carrots
- ½ cup chopped celery
- ½ onion, chopped
- 8 cups water
- 1 cup vegetable broth
- 1 teaspoon garlic powder
- ½ teaspoon ground black pepper
- 1 tablespoon salt
- 1 tsp curry
- ¼ tsp cinnamon
- 1-3 cloves minced garlic (to taste)
- 1 cup sliced fresh mushrooms (we did not use mushrooms)
- Place all ingredients except the mushrooms in the slow cooker and cook on low for 7 to 8 hours. Stir in the mushrooms 1 hour before serving.

This recipe sounds so delicious and comforting. I think the lentils and mushrooms are a great combination. I have been trying a lot of slow cooker recipes lately and I can’t wait to try this one. Thank you for sharing!

Be sure to watch it Ashley. I left my second batch on the counter overnight to cook and it was a huge pile of mush… I was so disappointed. I think the only difference this time was I didn’t stir it every so often.

this sounds really good – i would never have thought to put cinnamin in it tho! i need more recipes for the crockpot other than meat also!
Has anyone used short grain brown rice? Did you need to make adjustments?

Good but mine came out mushy. Not sure where I went wrong. Perhaps I will repurpose it into patties and fry on the stove???? Any suggestions?
Also this recipe make a lot! I’ll cut the lentils/rice in half next time.
