Zucchini Potato Bake Recipe

Our zucchini plants are in over production mode and we are bringing in 2-3 large ones a day. On my hunt for new and different ways to serve them to my family I ran across this recipe on Allrecipes.com. With a few little tweaks for family preferences and ingredients on hand we had a fabulously yummy dinner!

Zucchini Potato Bake Recipe
This is an easily customizable recipe that is a fabulous use for all your summer veggies!

Ingredients
  • 2 medium zucchini, quartered and cut into large pieces (we used 2 large)
  • 4 medium potatoes, peeled and cut into large chunks (I used ½ white ½ sweet potatoes for color & taste)
  • 1 medium red bell pepper, seeded and chopped (we used green)
  • 1 clove garlic, sliced
  • ½ cup dry bread crumbs
  • ¼ cup olive oil
  • paprika to taste
  • salt to taste
  • ground black pepper to taste
Instructions
  1. Preheat oven to 400 degrees F.
  2. Chop all veggies into large chunks.
  3. In a medium baking pan, toss together the zucchini, potatoes, bell pepper, garlic, bread crumbs, and olive oil. Season to taste with paprika, salt, and pepper.
  4. Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly brown.

    i hate zuchinni but wow this looks yummy. and healthy as well! now the hard part is getting the kids to eat it!

    • Mine were trying to pick out the potatoes LOL. I figure if they’re belly is full and they tried a few zucchini I’m happy.

    I actually don’t like zucchini, but I know it’s healthy and low-calorie. I think this would be a good way to try it. Something familiar.
