This year we planted zucchini for the first time. We finally started harvesting and the plants are producing in overdrive. I decided to go on a hunt for a recipe that would incorporate both my over abundance of zucchini and the over ripe bananas on my counter.

The family was a bit leery about banana muffins with zucchini in them, but one bite and they were hooked! They are super moist and great for breakfast or snack time.

Zucchini Banana Muffins Recipe

Ingredients
  • 1¾ cups flour (spooned and leveled) (I used organic/unbleached)
  • ½ cup ground flaxseed (I used ½ c. flaxseed & 2 tbsp organic butter: softened)
  • 1 cup lightly packed light-brown sugar (I used 1 c. coconut sugar)
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon coarse salt
  • 1 teaspoon ground cinnamon
  • 1½ cups coarsely grated zucchini (from 1 large zucchini)
  • ⅓ cup mashed ripe banana (from 1 large banana) (I used ½ cup)
  • ¾ cup whole milk (I used almond milk)
  • 1 large egg, lightly beaten
  • 1 teaspoon pure vanilla extract
Instructions
  1. STEP 1
  2. Preheat oven to 350 degrees. Grease 12 standard muffin cups. In a large bowl, whisk together flour, flaxseed, butter, coconut sugar, baking soda, baking powder, salt, and cinnamon. Add zucchini and banana and stir to combine. In a small bowl, whisk together milk, egg, and vanilla. Add milk mixture to flour mixture and stir until combined (do not overmix).

  4. Divide batter among muffin cups. Bake until a toothpick inserted in center comes out clean, 20 to 25 minutes. Let muffins cool completely in pan on a wire rack, about 30 minutes.

    It’s that time of year to figure out zucchini recipes – and this is a keeper! I would have never thought of putting bananas with zucchini, but yum! I like the flaxseed, too. I can’t wait to try this! healthy & yummy!

    I love making healthy muffins for breakfast. My daughter eats muffins almost every morning. It’s hard to tell from the photo, but are there visible green flecks in the muffins? If my daughter sees green, she won’t eat it. The rest of the family would love this, though!
