Soup Sunday | Enchilada Soup

I dug into my 3 ring binder of recipes that I’ve been hoarding again this week. This time I found a typed page with only a recipe on it. I, for the life of me, can’t remember where I got this recipe or if it was good. I assumed it was, because I kept the recipe. We were snowed in on Thursday and a warm pot of soup on the stove sounded fabulous… so I went to work. Prep was SUPER QUICK and the soup was a HIT!

Enchilada Soup Recipe

Ingredients
  • 3 C. Chicken Broth (I used vegetable broth)
  • 1½ C. Chopped Celery
  • ½ C. Dice Onion
  • 3 Cans Green Enchilada Sauce (I used mild)
  • 1 15-oz Can Pumpkin
  • 1 C. Frozen Corn
  • 1 Can Black Beans (rinsed & drained)
  • 1 Cup Chopped Chicken (I used Morningstar Farms faux Chicken)
  • Tortilla Chips
Instructions
  1. In a large pot, bring broth to boil - add celery and onion then simmer 5-10 minutes.
  2. Stir in enchilada sauce and pumpkin and stir until smooth.
  3. Add chicken, corn and black beans.
  4. Serve with crushed Tortilla Chips.

    I have never tried enchilada soup, but I love enchiladas so I am sure that I would enjoy it as a soup. I have been meaning to try a recipe for enchilada soup for awhile now and just have not got around to it. I have seen many recipes for enchilada soup, but I have never seen one that includes pumpkin. This soup will be a great healthy recipe to make when we start eating healthy in the New Year. Thank you for sharing!

    I love this soup and so does everyone else. I make it in a crock pot and it makes tons, so I freeze what we don’t eat and have a meal for later. It’s great with mexican cornbread too.

    Interesting that it adds pumpkin to the soup. Could you taste it or did it just give body to the soup?

    • Hi Sarah,

      My husband had no clue there was pumpkin in it. I think it just thickens it up a bunch. It was yummy!

    Yummmmmm!! Looks fantastic! I love going to bloggers sites and finding good recipies, although I do the same. I keep them all in the drawer and finally when I get an itch to try something new, I pull them out and pick one. I love having soup during the winter months.. Gets you warm and tastes wonderful!

    Great idea! I just had an enchilada today, and it had a green chile Verde. I think adding some tomatillos to this would be a nice addition.
