There are many ways to incorporate “EB” eggs into your meals and Eggland’s Best would like the next “CEO” to show us how EB eggs are THE ONLY eggs for them.

I am passionate about EB Eggs because compared to ordinary eggs, EB eggs have four our times more vitamin D, keeping your bones and muscles strong. They’re beneficial to heart health, as they contain double the omega-3s and have ten times more vitamin E than ordinary eggs.

How to Apply:

You can visit the Eggland’s Best website from March 3rd to May 24th, 2015 to fill out a submission on why you think you would make a great “Chief Egg Officer.”

Voting will take place between July 7th and August 2nd, and the winner will be announced on August 4th!

What Can You WIN?

One Grand Prize winner will receive $5,000 cash, a year supply of Eggland’s Best eggs, and a nutrition consultation with Tammy Lakatos Shames and Lyssie Lakatos (The Nutrition Twins)! Two runners-up will receive $500 cash and a year supply of Eggland’s Best eggs.

I decided that this was the perfect time to share one of my favorite egg recipes with you! I love the “Make It Your Way Frittata” because with both vegetarians and meat eaters in my house, we can all have basically the same meal with just a small twist on it.

“Make It Your Way” Frittata Recipe

Ingredients:
olive oil (enough to coat the pan)
1 dozen eggs
vegetables of your choice… I used:
1 Portabella mushroom cap
1 onion
3 red potatoes
1 green pepper
meat of your choice… I used:
bacon pieces (to taste)
Shredded cheese to taste

Pre-heat oven to 350 degrees.
Choose your favorite vegetables in the portions you prefer. Cut into bit sized pieces.
Coat oven safe pan with olive oil to prevent sticking. A well seasoned cast iron skillet works well.
Place vegetables in hot pan and sauté until potatoes are near tender stage.

While vegetables are cooking whisk together 12 Egglands Best eggs.
Once vegetables are cooked to your liking arrange them in the pan so they have equal coverage.

Pour all 12 beaten eggs over the vegetables.
If using meat, be sure it is pre-cooked and sprinkle over/into the egg mixture.
Place oven safe pan into pre-heated oven and bake for approximately 15 minutes.
You will know the Frittata is done when the eggs are no longer shiny and the eggs do not “dance” when the pan is shaken.
If adding cheese, do so now and place back in over for 1-2 minutes until cheese is melted.

There you have it! This recipe saves well in the refrigerator and is great for a quick re-heat breakfast.

If you cut your pan into quarters remember that you are consuming approximately 4 eggs in that portion. If you cut the pan into eighths then the serving will contain approximately 2 eggs.
