Avocado Ranch Chickpea Salad Recipe #FavRanchFlav
  • 15 oz container chickpeas
  • ¼ cup shredded carrots chopped into smaller pieces
  • 2 cups cut grape tomatoes
  • 1 cup peeled, seeded and chopped cucumber
  • ¼ cup Feta cheese
  • ¼ cup chopped onion
  • ¼ cup Hidden Valley Ranch Avocado Ranch Dressing
  • salt & pepper to taste
  1. Rinse the chickpeas and place in a bowl.
  2. Peel, remove the seeds (easily scooped out with a spoon) and chop the cucumbers. Add them to the same bowl.
  3. Cut the grape tomatoes into fourths and add to the mixture.
  4. Cup and chop the onion and crumble the feta choose and add to the bowl.
  5. The last step is to mix in the Hidden Valley dressing. I used ¼ cup, but if you want more ranch flavor simply add more. At this point, taste test the mixture. I decided to sprinkle some garlic salt on top and work it in.
