Garlic Parmesan Bacon Potatoes

  • 3 lb Yukon Potatoes
  • 12 oz Bacon
  • 2 tbsp Butter
  • 2 tbsp minced Garlic
  • ¼ cup Parmesan Cheese
  • ¼ cup chopped fresh Parsley
  • ¼ cup sliced Green Onion
  • Salt & Pepper to taste
Instructions
  1. Slice potatoes in half lengthwise and place in water and boil for 12 minutes.
  2. Drain potatoes and set aside.
  3. Slice bacon into 1" pieces and fry until cooked but not crispy. Allow to drain. Reserve bacon grease.
  4. Preheat oven to 400.
  5. In a large pan, add 2 tablespoons bacon grease and butter and heat over medium heat.
  6. Add garlic, parsley, salt and pepper and mix well.
  7. Add potatoes and toss to coat well.
  8. Transfer potatoes to baking sheet cut side down.
  9. Sprinkle bacon over potatoes.
  10. Heat 30 minutes or until cut side begins to brown.
  11. Flip and bake another 15 minutes.
  12. Garnish with sliced onions.
