Tortellini Soup Recipe

Serves: 4-6
Ingredients
  • olive oil
  • 5¼ cups vegetable broth
  • 1 (14.5 ounce) can Italian-style stewed tomatoes
  • 2 clove garlic, minced
  • ½ small onion, diced
  • 1-2 pinches oregano (to taste... I used 2)
  • 1-2 pinches thyme (to taste... I used 2)
  • 1-2 pinches parsley (to taste... I used 2)
  • 2 tablespoons grated Parmesan cheese
  • 1 (16 ounce) packageprepared cheese tortellini, thawed
  • 10 ounces spinach, rinsed and chopped
Instructions
  1. * Sautee diced onion and 2 cloves of garlic in olive oil
  2. * Add vegetable broth
  3. * Bring to a slow boil and add the Italian style diced tomatoes and a couple of pinches each of dried oregano, thyme, parsley and a little red pepper flake for some heat.
  4. * Once this comes back to a boil, add fresh spinach to the broth
  5. * A few minutes later added tortellini
  6. * Simmered it for about 10 minutes and then served it up with parmesean cheese
