No Churn Blueberry Cheesecake Ice Cream Recipe

Summer is here and the kids are home.

I’ve looked high and low for a no churn recipe for ice cream that I could do with the kids. We’ve had ice cream makers in the past but we would always end up with salt in the ice cream or find another way to ruin it.

This recipe is simple with simple ingredients.

Make it ahead… maybe freeze overnight for a sweet treat they will be proud & happy to have been apart of!

INGREDIENTS

2 cup Heavy Whipping Cream

14 oz Sweetened Condensed Milk

8 oz softened Cream Cheese

2 tsp Vanilla

2 cup thawed Frozen Blueberries

3 tbsp Sugar

2 tbsp Lemon Juice

Cook the blueberries, sugar, and lemon juice and salt over medium high heat.

Bring to a boil, ensuring that the berries crush and release juice.

Allow to boil until it starts to thicken.

Remove from heat and allow to cool completely then chill in refrigerator for about 1 hour.

In a large bowl, beat cream cheese until creamy and smooth.

Using a electric whisk, add condensed milk and vanilla, whisking until smooth.

Add in vanilla extract and heavy cream. Whisk on high speed until soft peaks form.

Spread half of this mixture into a loaf pan.

Spoon chilled blueberry sauce over the whipped mixture.

Top with remaining cream mixture, spreading evenly.

Using a knife, drag or swirl the blueberry mixture into the cream mixture.

Cover with foil and freeze for 6 hours or until firm.

    Are youidding me? This is amazing! I am soexcited to try this! thank youso much! I do have an elec ic maker, but keeping the tank clean and in the freezer — well it is never available when I need it. It seels the lone piece of frozen spinach ir ice cube always end up stuck on it and ineed to that that off and rwe-freze it beforeI plan to make anything.
