Black Bean Burgers Recipe
As some of you may know, our family has decided to start eating more healthy. This includes eating a lot more fruits and vegetables, eating a lot less high fructose corn syrup, avoiding white starches and for two of the family members, avoiding meat! Yes, my husband and oldest are vegetarians. Myself? I still occasionally eat meat, but for the most part… nah. This has challenged me to find new recipes that are, most importantly, balanced and tasty. 

Last week I shared my favorite cucumber recipes. This week is a family favorite… homemade black bean burgers. These taste nothing like store bought ones (which make me gag). As a matter of fact, my husband brought one to work for lunch and a co-worker swore up and down he was eating hamburger! lol

This recipe was found at theveggietable.com. I usually double the recipe for our family of 6. I have also found that they can get a little crumbly. The last time I made them I used one egg for a binder.

Black Bean Burgers Recipe

Ingredients
  • 2 T olive or vegetable oil
  • 1½ c onions, chopped
  • 2 cloves garlic, minced
  • 1 T fresh ginger, minced
  • ½ t allspice
  • ½ t nutmeg
  • 1½ c black beans, cooked or canned
  • 1½ c cooked rice
  • ½ habanero pepper or 1 jalapeño pepper, chopped (seeds optional)
  • 1 c bread crumbs
  • 1 t salt
  • black pepper
Instructions
  1. Heat 1 T of oil and sauté the onions, stirring occasionally, until they soften, about 5 minutes. Add the garlic, ginger, allspice, and nutmeg and sauté for two more minutes.Pour into food processor along with beans, rice, and peppers. Pulse repeatedly, until mixture is chopped, not puréed.
  2. Transfer to bowl, add remaining ingredients, and mix well. Taste and adjust seasonings.
  3. Shape into four patties, adding more bread crumbs if necessary.
  4. Fry in 1 T oil over medium heat until crust forms, about 4 minutes per side.

    I usually buy these premade in the store that are frozen, which are pretty good, but I never tried to make one myself, loks like a little challenge for myself, and going on my to do list for the weekend.
