Avocado Ranch Chickpea Salad Recipe #FavRanchFlav

With summer here I have been on the hunt for light, refreshing and quick meal ideas to whip up that don’t warm the house up while making them.

My recipe options are limited because three of our family members are vegetarians. Anything with beans is a winner and I had recently heard about Hidden Valley’s new ranch flavors. I usually use mayo in my bean salads, but I thought some of these new flavors would be perfect to incorporate into a bean salad.

I found the new options at my local WalMart in the condiment aisle. I had a hard time choosing from Avocado Ranch, Cucumber Ranch, Cucumber Ranch Light, Sweet Chili and Roasted Garlic, but I decided that since we love avocados I’d try that one.

I had a lot of the ingredients already on hand at home waiting for me, so I got to work immediately.

This recipe is very customizable. You can add as much or as little of each ingredient depending on what you like.

I used:

15 oz container chickpeas
1/4 cup shredded carrots chopped into smaller pieces
2 cups cut grape tomatoes
1 cup peeled, seeded and chopped cucumber
1/4 cup Feta cheese
1/4 cup chopped onion
1/4 cup Hidden Valley Ranch Avocado Ranch Dressing
salt & pepper to taste

Rinse the chickpeas and place in a bowl.

Peel, remove the seeds (easily scooped out with a spoon) and chop the cucumbers. Add them to the same bowl.

Cut the grape tomatoes into fourths and add to the mixture.

Cup and chop the onion and crumble the feta choose and add to the bowl.

The last step is to mix in the Hidden Valley dressing. I used 1/4 cup, but if you want more ranch flavor simply add more. At this point, taste test the mixture. I decided to sprinkle some garlic salt on top and work it in.

I presented this delicious little dish to my husband who, after adding a touch of salt & pepper, could not stop eating it.

We love the new Hidden Valley flavors and now on a mission to use them creatively in more recipes this summer.

Who knew that Hidden Valley Ranch was not just as a dip, topping or salad dressing?

    That’s great with the protein from the chickpeas and all the veggies. I think garlic salt can be added to most anything (not desserts, tho)

    This is a very healthy Salad. I like Chickpeas because they taste good and are healthy. I want to make this salad and I love the taste of Hidden Valley Salad dressing. It has so much flavor!

    I haven’t tried their different flavors of Ranch yet, but I love Avocado. It would go perfect with any salad and even on a fish taco.

    i love this recipe, but i dont like ranch dressing so i would use some other dressing or low fat mayo. however, i love salads with lots of veggies and greens.

    I love everything except the cucumbers, but my Mom loves those…so, we would fight over whether to put those in, lol. But I like the chickpeas, etc. We’ll try this one.
